Abstract: The authors reviewed the development and reasons of ancient and modern rice milling sci-techniques, briefly introduced the process principles and equipments of modern mechanical rice milling, rice storage and development of deep processing techniques, prospected the development trend of rice process and equipments in China.

摘要: 回顾了碾米科技的发展历程——从石碾米、舂米、碓米到机械碾米和全程自动化碾米及其原因,简要介绍了现代化机械碾米工艺原理及主要设备、稻谷(大米)的储藏和精深加工及技术的发展,展望了稻米加工工艺及其机械的发展趋势。
